The Story
Every cup of coffee tells a story. This one starts in Oaxaca, with Red Fox Coffee supporting small communities to improve quality, build trust, and access fair markets. Through that partnership, we connected with Yosotatu, a mountain community determined to do things their own way.
San Pedro Yosotatu sits between 1700 and 1900 meters above sea level. Families manage tiny farms of one to two hectares, growing Bourbon, Typica, and Pluma varieties. They handle everything themselves, fermenting cherries in wooden tanks for a full day and drying them on petate mats for over a week. Shade trees like ice cream bean and pine provide shelter for the coffee on the farms.
The community of forty family members and neighbors organizes collection days, carries coffee to the warehouse, and shares knowledge like a family. Their independence and care are evident in every cup.
Yosotatu is bright and lively in the cup, with notes of plum and lemon, natural sweetness of dates, and clarity that leaves you smiling.
