The Story

This Koke Red Honey is a love letter to Ethiopia’s coffee heritage. Grown in the lush, high-altitude hills of Yirgacheffe’s Gedeo zone, it comes from the Konga Washing Station, perched 2,000 meters above sea level. Here, more than 400 smallholder farmers from the communities of Koke, Konga, Udessaa, and Birbirsa Kala bring in their harvests of heirloom Kudhume and Dega varieties.

The Red Honey process is as intentional as it is beautiful. It starts with selecting only the sweetest cherries, those reading above 20° Brix, followed by careful floating and sorting. The cherries then rest for a day in the open air, another day in anaerobic tanks, and finally are depulped and dried slowly on shaded raised beds for up to two weeks. This patient, meticulous approach develops the layered sweetness and clarity we love in the cup.

Behind it all is SNAP Specialty Coffee, an Addis Ababa–based company founded in 2008 by Mr. Negusse, whose passion for coffee is matched by a deep commitment to the people who grow it. Through their own washing stations and partnerships in Sidama, Yirgacheffe, and Guji, SNAP provides training for over 6,000 farmers, improving nursery management, coffee production, and processing techniques. They champion soil and water conservation, combat deforestation, and uphold strict quality standards at every step.

Our import partner began working with SNAP in 2024, and this coffee marks the beginning of what we hope will be a long, meaningful relationship in the birthplace of Arabica. Every sip of Koke Red Honey is a reminder of the care, connection, and shared dedication that make coffee extraordinary.
