On a farm in the Matapalga region of Nicaragua begins a stream that provides clean spring water to the community. This stream is adjacent to a special underground drainage system of perforated PVC tubing that gathers runoff from the coffee trees above; this water is then filtered by the soil instead of polluting the waterway. This unique feature was designed by Roger Mairena using the technical knowledge drawn from his degree in agronomy. 

Together with his wife Isabel they grow coffee on their farm Las Mercedes where they work with Gold Mountain Coffee Growers, a direct trade social enterprise that teams up with producers to ensure cup quality and better prices for beans. Their partner farms receive microcredit and larger loans as well as technical assistance. With this empowerment producers increase yields, expand farms, invest in equipment, and provide for their families. GMCG also works with communities in Nicaragua on projects including running water, libraries in schools, electricity in homes, and protecting endangered species.       

A repeat Golden Bean winner, this naturally processed coffee exemplifies how careful picking and processing helps bring forth exceptional flavors. Red grape is the most forward note in the cup seamlessly accompanied by papaya and stone fruit. This coffee is incredibly balanced and is a great coffee for exploring. Brewed on a Kalita the complex, ripe stone fruits and juicy body predominate. The clarity of a V60 really showcases the bright acidity of papaya and the fresh pop of red grapes anchored by confectioners sugar.
