The Farm

Pacamara Collaborative is a low-yielding, high-quality coffee collaboration of several producers from the Jinotega region of Nicaragua. Known as the “city of mists” Jinotega is surrounded by mountains and is home to many different microclimates favorable for growing excellent coffee. Created during the 1950s in El Salvador by the Institute for Coffee Research, Pacamara is a cross between Pacas and Maragogype varieties. It retains the large bean size of the Maragogype but typically produces a more complex cup thanks to the Pacas, a natural mutation of Bourbon.

This washed processed coffee is brought to us by Gold Mountain Coffee Growers, a direct trade social enterprise that teams up with producers to ensure cup quality and better prices for beans. Their partner farms receive microcredit and larger loans as well as technical assistance. With this empowerment producers increase yields, expand farms, invest in equipment, and provide for their families. GMCG also works with communities in Nicaragua on projects including running water, libraries in schools, electricity in homes, and protecting endangered species.

Simultaneously complex and comforting, the apple juiciness and brown sugar smoothness are braced by the tart rhubarb acidity. A truly harmonious cup with a syrupy body makes this a great choice for someone looking to branch out from traditional breakfast coffee.
