The Farm
Our new coffee comes to us from the Huila Condor Project, a remarkable group of 96 individual female farmers in the Huila region of Colombia. Much like the symbolism the condor bird portrays in the country, the Huila Condor Project strives to bring wisdom, freedom, and connection to female coffee farmers in the region. In their pursuit of creating a new benchmark for specialty coffee, the Condor Project hosts internal workshops and competitions as well as providing direct payment that is above the current market rate. Day by day, these women are raising the standards and you can taste it in their beans.
This coffee is a combination of two varietals, Caturra and Castillo. The beans undergo a washed process which includes a fermentation step lasting anywhere between 24 and 36 hours. Afterwards, they are left to dry in the sun for a range of 15 to 20 days.
