The Farm
Erling Montenegro is the producer of our new coffee; he comes from a family of coffee farmers and specializes in soil science. After working for the coffee importer, Caravela, for four years, Erling decided to follow in his father’s footsteps and have a farm of his own. He named his finca Las Neblias after the fog that rolls over the hills at dawn and dusk. The farm sits at an elevation of 1450 MASL in the northwest of Nicaragua, less than 5 miles from the border of Honduras. Keeping the tradition of family alive, Erling’s wife, Margarita, helps with the administrative side of the business. Together, over five years, they’ve built up their 10 hectare (24.7 acre) farm to produce high quality coffee while focusing on sustainability and lasting relationships.
This coffee is a mixture of varietals including Catuai, Caturra, Catimor, and Maragogype. After being picked at the peak of ripeness the beans are pulped and fermented for 26-32 hours, then washed as many as three times, and are left to rest on raised and covered beds for an average of two weeks.
